Abstract

Oxidative stress and chronic inflammation play a central role in the pathophysiology of several chronic diseases. In this context, bioactive compounds of dietary origin have been extensively investigated for their ability to modulate inflammatory and redox pathways. The literature indicates that compounds such as curcumin, gingerols, and sulfur compounds from garlic and tomatoes modulate inflammatory transcription factors and activate endogenous antioxidant systems. However, the effects observed in humans are heterogeneous, influenced by factors such as preparation method, dose, food matrix, and patient variability. Dietary patterns rich in plant-based foods containing multiple bioactive compounds are associated with improved markers related to oxidative stress and inflammation. Considering the complexity of the food matrix and human biological systems, the results reinforce the importance of an individualized dietary approach, rather than isolated supplementation of specific compounds, especially in the absence of standardization of effective doses.
