Resumo

O estresse oxidativo e a inflamação crônica, desempenham papel central na fisiopatologia de diversas doenças crônicas. Nesse contexto, compostos bioativos de origem alimentar têm sido amplamente investigados por sua capacidade de modular vias inflamatórias e redox. A literatura indica que compostos como curcumina, gingeróis e substâncias sulfuradas do alho e tomates, modulando fatores de transcrição inflamatórios e ativando sistemas antioxidantes endógenos. No entanto, os efeitos observados em humanos apresentam heterogeneidade, influenciada por fatores como forma de elaboração, dose, matriz alimentar e variabilidade do paciente. Os padrões alimentares ricos em alimentos de origem vegetal, contendo múltiplos compostos bioativos, estão associados à melhora de marcadores relacionados ao estresse oxidativo e à inflamação. Considerando a complexidade da matriz alimentar e dos sistemas biológicos humanos, os resultados reforçam a importância de abordagem dietética individualizada, em detrimento da suplementação isolada de compostos específicos, especialmente diante da ausência de padronização de doses eficazes.
