This chapter explains what health education is and how it can be applied in animal production. Health education is a continuous and planned teaching and learning process, built through dialogue between the professional and the people with whom they work, with the aim of strengthening these people's capacity to adopt practices that protect health. In animal production, it is directly linked to the One Health approach, according to which human health, animal health and environmental health are interdependent. For a better understanding, the fundamentals of health education were addressed, covering its concept and principles of application, the role of professionals in carrying out educational actions, the characteristics of the audiences involved and the choice of methodological strategies, as well as aspects related to the planning and evaluation of these actions. The contribution of animal health programs and rural extension in the Brazilian context was also discussed. As a result, it is noted that the transmission of knowledge alone does not guarantee changes in practices in favor of health and, therefore, people must be engaged in participatory actions that are adapted to the local reality, continuous and accompanied by technical assistance in order to be more effective.
