REFORMULAÇÃO DE ALIMENTOS: ESTRATÉGIAS E DESAFIOS TECNOLÓGICOS PARA REDUÇÃO DE AÇÚCARES, SÓDIO E GORDURAS

A reformulação de alimentos tem sido amplamente empregada como estratégia para melhorar o perfil nutricional de produtos industrializados por meio da redução de açúcares, sódio e gorduras, atendendo às recomendações de saúde pública e às demandas regulatórias. Entretanto, esses ingredientes exercem funções essenciais relacionadas à estrutura, textura, sabor, estabilidade, conservação e aceitação sensorial, tornando sua redução ou substituição um importante desafio tecnológico. Este capítulo teve como objetivo apresentar uma revisão narrativa sobre as principais estratégias utilizadas na reformulação de alimentos para redução de açúcares, sódio e gorduras, abordando suas funções tecnológicas, alternativas de substituição, desafios tecnológicos e limitações nutricionais. A revisão foi realizada a partir de publicações científicas recentes e documentos de organismos nacionais e internacionais. As evidências demonstram que estratégias como redução gradual, substituição por ingredientes ou sistemas estruturados, engenharia da matriz alimentar e modificação da percepção sensorial apresentam potencial para melhorar o perfil nutricional dos alimentos, desde que adaptadas às características de cada matriz alimentar. Contudo, a reformulação deve ser avaliada de forma integrada, considerando não apenas a redução de nutrientes específicos, mas também seus efeitos sobre a composição nutricional global, a qualidade tecnológica, a segurança, a estabilidade e a aceitação sensorial dos produtos. Assim, abordagens multidimensionais representam a alternativa mais promissora para o desenvolvimento de alimentos nutricionalmente mais adequados e tecnologicamente viáveis.
