Abstract

Translucency in pineapple infructescences is a physiological disorder that alters pulp color and leads to internal browning. This study aimed to evaluate the quality and translucency, using digital image processing, of infructescences of ‘Pérola’ pineapple produced under nitrogen and potassium fertilization. Five rates of urea (0.53, 3.20, 5.33, 7.47, and 10.13 g per plant) and five rates of potassium chloride (0.30, 1.78, 2.97, 4.15, and 5.64 g per plant) were combined in a factorial scheme according to the Plan Puebla III matrix, totaling ten treatments. Nitrogen and potassium fertilization in the cultivation of ‘Pérola’ pineapple influenced the levels of translucency in the pulp of infructescences at commercial maturity. In this context, a high N rate (7.47 g of urea per plant) combined with a low K rate (1.78 g of KCl per plant) increased pulp translucency and reduced the content of yellow flavonoids. However, translucency decreased when K was supplied at 4.15 g of KCl per plant in combination with 7.47 g of urea per plant. Under the conditions of this study, the combination of 7.47 g of urea and 4.15 g of KCl per plant in the cultivation of ‘Pérola’ pineapple favored infructescence quality by maintaining low translucency levels and high contents of yellow flavonoids, reducing sugars, and soluble proteins in both the pulp and the central axis. Digital image processing proved to be an important tool for characterizing translucency and pulp color changes associated with this phenomenon.
